Mutton Paya

  • If you fancy something a little different this Sunday, try out this timeless roast lamb with a French spin. Additionally, I've added two recipes for boulangère sausage and gravy to give your meal a genuine texture.

     

    2 red onions, sliced 1 garlic bulb, halved 2kg leg of lamb Zest and juice of 2 lemons, retain cubes Few sprigs of thyme Boulangère sausage and redcurrant gravy, to function

    From the storecupboard 3tsp Olive-oil

     

    Preheat the oven to 220C/200C Fan/Gas 7. Put 2 sliced red onions and 2 halves of a garlic bulb at a roasting tray. Pour over 3tbsp water.

     

    Make 1015 slits at a 2kg leg of lamb and wear top of these onions. Mix together the zest and juice of two lemons, 3tbsp olive oil and also 1/2tsp pepper and then rub.

     

    Add the lemon cubes into your tray. Add sprigs of rosemary to the slits, period and cook for 20 minutes, then lower the toaster to 190C/170C Fan/Gas 5, spoon any juices throughout the batter and cook for 80 minutes for moderate to do that (or to your liking).

     

    Remove lamb, cover with foil and rest for about paya recipe urdu 10 minutes just before working out with boulangère sausage and redcurrant gravy.
